SUMMER SELECTION FROM OUR SOMMELIER
To celebrate the arrival of long, hot Summer days, Cafe Sydney's Sommelier, Todd Cummins has put together a list of his favourite wines, perfectly matched to the season and currently in their drinking prime.
2008 Ishtar Viognier - Barossa Valley SA
A seductive wine full of flavours of musk, spice, apricots, peaches and citrus blossoms, ideally matched with our entree of lightly cured kingfish with prawn, blood orange, fennel, avocado and raspberry vinaigrette.
2006 Symphonia Arneis - King Valley, VIC
Delicate aromas and flavours of pears, with a hint of almonds, ideally matched with our entree of peppered wagyu carpaccio, truss tomatoes, pecorino, rocket and horseradish and lemon dressing.
2005 Mitchelton 'Airstrip' Marsanne, Roussanne, Viognier - VIC
A blend of Marsanne, Roussanne and Viognier exhibiting white peach and melon flavours, delicate rose aromas and apricot flavours and body. An ideal match for our main course of grilled swordfish with baby octopus, mussels, vongole, saffron aiolo and a crustacean broth.
2007 Chalk Hill Barbera - McLaren Vale, SA
An explosion of ripe berries and bitter chocolate, with a hint of spicy complexity and thanks to its firm acid structure and silky tannins, ideally matched with our main course of crusted lamb rack with confit shoulder, eggplant, red pepper, zucchini, tomato and jus.
2003 Castanga 'Sauvage' - Beechworth, VIC
Exhibits an array of rich, ripe, plumy flavours, black berries and savoury flashes of smoky baconm, ideally matched with our main course of grilled pork cutlet with rainbow chard, smoked speck, caramelized Corella pear and consomme.
